Almond Cake

Ingredients

Directions

The book says “a steady oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Break the eggs into a clean bowl.

  3. Butter a plain mold.

  4. Place 3 or 4 layers of newspaper under the mold.

  5. Wrap the mold around the sides, securing with twine.

Make the batter

  1. Add the warmed sugar.

  2. Beat until thick like cream.

  3. Add the melted butter.

  4. Mix in the ground almonds.

  5. Mix in the sifted flour.

  6. Mix in the essence of lemon with a spoon.

Bake

  1. Fill the mold with the mixture.

  2. Bake for 1 to 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten to a thick foam, they trap air and give the cake its light structure.
Sweet almonds
Provide the main almond flavour and body, with moisture from their natural oils.
Flour
Forms the structure that holds the cake together as the eggs set.
Butter
Adds richness and tenderness, and fat that softens the crumb.
Castor sugar
Sweetens the cake and helps hold air when beaten with the eggs.

The step that matters

Beat until thick like cream. Beating the eggs and sugar well traps air that leavens the cake. Under-beaten batter gives a dense result, so the foam must be thick before adding the other ingredients.

Swap the lemon
