Why it works: Syrup and gelatin match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 192 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients

Directions

Prepare

  1. Remove the stones from the apricots and slice them thinly.

  2. Make the syrup as directed and pour it boiling over the apricots, then add the lemon juice.

  3. Soak the gelatin in a little cold water, then stir it over low heat until dissolved.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apricots
Provide the fruit flavour and body of the jelly.
Gelatin
Sets the liquid into a firm, sliceable jelly as it cools.
Lemon juice
Adds acidity that brightens the apricot flavour.
Syrup
Sweetens the jelly and carries the apricot flavour.

The step that matters

Soaking and dissolving the gelatin. Gelatin must be softened in cold water first, then melted gently over low heat. Boiling it can weaken its setting power, and undissolved granules leave the jelly grainy or uneven.

Swap the lemon

How well each one fits the dish's main ingredients (apricot, syrup, sugar, gelatin):

  1. Vanillafits better
  2. Peachfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against apricot, syrup, sugar, gelatin. Candidates are from the same food group and used in at least 100 recipes.
