Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Arrowroot
Thickens the milk as it heats, setting the blancmange into a firm, smooth body.
Milk
Forms the liquid base and gives the set dessert a creamy, soft texture.
Sugar
Adds sweetness, adjusted to taste after the milk is strained.
Lemon rind
Infuses aromatic oils into the milk for a bright citrus fragrance.
Vanilla
Adds a warm, aromatic flavor that rounds out the milk.

The step that matters

Keep the arrowroot boiling gently after returning it to the heat. Arrowroot thickens when heated with liquid and must be cooked through to reach full thickness and a smooth, glossy set. Stirring while it heats prevents lumps and sticking on the base of the pan.
