What each ingredient does

Asparagus
Provides the main flavour and, once puréed, the body of the soup.
Spinach
Adds colour and body to the purée, thickening the soup as it breaks down.
Flour
Thickens the milk with butter into a smooth base that gives the soup body.
Milk
Adds creaminess and softness, rounding out the vegetable flavour.
Butter
Adds fat and richness and helps form the flour-thickened base.
Cream
Added at the end to enrich the texture and mellow the soup.

The step that matters

Rub through a fine sieve. Pushing the cooked asparagus and spinach through a fine sieve removes fibres and skins, giving a smooth purée. Skipping or rushing this step leaves the soup stringy and gritty.

Swap the asparagus

How well each one fits the dish's main ingredients (milk, spinach, butter, flour, cream, pepper):
