What each ingredient does

Macaroni
Forms the bulk of the dish and absorbs stock as it cooks, giving body and texture.
Streaky bacon
Adds salty, savoury fat and flavour, and crisps to contrast with the soft pasta.
Stock
Cooks the macaroni while adding savoury flavour and liquid for a moist result.
Butter
Adds richness and helps the macaroni brown in the pan.

The step that matters

Stir gently until the macaroni is nicely browned. Pasta that is already cooked only needs a short time in hot fat to brown. Stirring gently keeps the pieces from breaking and lets them colour evenly rather than steam.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, pepper):

  1. Parsleyfits better
  2. Sagefits better
  3. Thymefits better
