Barley Sugar

Ingredients

Directions

Make the syrup

  1. Dissolve the sugar in the water.

  2. Boil until it reaches the 'small ball' stage.

  1. Add a few drops of saffron coloring and flavor to taste.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Forms the candy base that hardens into a clear, brittle glass when cooled.
Lemon juice
Adds acidity that helps prevent sugar crystallization and brightens the flavor.
Cream of tartar
Acid that helps keep the syrup smooth and prevents graininess.

The step that matters

Boiling to the large crack stage. Sugar syrup must reach the correct temperature to set hard and brittle. Stopping early leaves a sticky, chewy candy, while overcooking can scorch the sugar and give a bitter taste.

Swap the saffron

How well each one fits the dish's main ingredients (sugar, lemon, cream):

  1. Nutmegfits better
  2. Cinnamonfits about as well
  3. Peppermintfits about as well
  4. Saffronthe original

Fit is the average pairing score against sugar, lemon, cream. Candidates are from the same food group and used in at least 100 recipes.
