Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Provide the main bulk and moist, sweet body of the pudding once pureed.
Butter
Enriches the batter and adds richness and flavour.
Eggs
Egg whites whipped to a froth lighten the batter; yolks help bind it.
Fresh breadcrumbs
Absorb moisture and give the pudding its soft, crumbly structure.
Castor sugar
Adds sweetness and helps tenderise the batter when creamed with butter.

The step that matters

Folding in the egg whites. Whipped whites hold air that lightens the pudding. Stirring them in vigorously knocks the air out, leaving a dense result, so fold gently.

Swap the carrot

How well each one fits the dish's main ingredients (butter, sugar, egg, cinnamon):

  1. Sweet potatofits better
  2. Capsicumfits better
  3. Chivefits better
  4. Carrotthe original

Fit is the average pairing score against butter, sugar, egg, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
