Cheese Cakes, Folkestone

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Simmer the ground rice in milk for 30 minutes.

  2. Stir in the butter, sugar, lemon rind, well-beaten eggs, and salt.

  3. Cook the mixture by the side of the fire until it thickens.

  4. Let it cool slightly, then line the patty pans with pastry.

  5. If the oven has a good bottom heat, half-bake the pastry before adding the mixture.

  6. Fill the pastry with the cheesecake preparation and sprinkle currants on top.

  7. Bake in a brisk oven at 400°F (200°C) for 25 to 30 minutes.
