Chester Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Stir the egg yolks and caster sugar together until thick and smooth.

  2. Add the warmed butter, ground almonds, almond essence, and the grated rind and juice of the lemon.

  3. Line a small pie dish with the short crust pastry and pour in the mixture.

  4. Bake gently at 350°F (175°C) for 20 minutes, or until set.

Top and finish

  1. Whip the egg whites until stiff and pile them on top of the pudding.

  2. Dredge liberally with caster sugar and return to the oven.

  3. Bake gently until the whites harden and acquire a little color.

  4. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks set the custard filling, and whites whipped to stiff peaks form the topping.
Caster sugar
Sweetens the filling and, sprinkled on the whites, helps them brown in the oven.
Butter
Adds richness and a tender texture to the filling.
Ground almonds
Add body and a nutty flavor to the filling.
Lemon
Its rind and juice add aroma and a bright acidity that cuts the sweetness.

The step that matters

Whip the egg whites until stiff. Whites must be beaten to stiff peaks so the meringue holds its shape on top. Under-whipped whites will weep or slump, and the gentle final bake then sets and browns them evenly.
