Cod’s Roe, Fried

Ingredients

Directions

  1. Heat the butter in a sauté or frying pan.

  2. Cut the cod's roe into 8 slices and fry them lightly on both sides.

  3. Sprinkle the croutes with shallot, parsley, and pepper.

  4. Lay a slice of roe on each crout, add a few grains of cayenne, and serve hot.

  5. For a decorative touch, garnish with strips of gherkin and hard-boiled egg or anchovy butter.

  6. For fresh roe, wash it, cover with boiling water, season with vinegar and salt, boil gently for 10 minutes, cool, slice, and cook as directed.
