What each ingredient does

Egg yolks
Thicken the sauce as they cook and add richness and a smooth, creamy body.
Gelatine
Sets gently as the sauce cools, giving it body and helping it hold its shape.
Freshly-ground coffee
Provides the main coffee flavour and aroma of the sauce.
Caster sugar
Adds sweetness and balances the bitterness of the coffee.

The step that matters

Cook the sauce slowly. Egg yolks thicken gently at moderate heat but can curdle or scramble if overheated. Cooking slowly while stirring keeps the sauce smooth and creamy.
