Crab Apple Jelly

Ingredients

Directions

Prepare the fruit

  1. Halve the crab apples and place them in a preserving pan with cold water to barely cover them.

  2. Simmer gently until tender, then strain the mixture.

Make the jelly

  1. Return the liquid to the pan; for each pint, add 1 lb of sugar and 2 teaspoons of lemon juice.

  2. Simmer gently for about an hour, skimming as needed.

  3. Measure the liquid; for each pint, dissolve 1 oz of gelatin in a little warm water and strain it into the pan.

  4. Pour the mixture into a prepared mold or jelly glasses and serve when set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab apples
Provide natural pectin and tart flavour that give the jelly its body and character.
Sugar
Adds sweetness and helps the jelly set and keep its texture.
Lemon juice
Adds acidity that brightens flavour and supports proper setting.
Gelatine
Adds gel structure so the jelly holds its shape when set.

The step that matters

Simmer gently for about an hour, skimming as needed. Boiling too hard can cloud the jelly and drive off water unevenly, while skimming removes foam that would spoil clarity and texture. Gentle, steady heat keeps the jelly clear and sets it evenly.

Swap the apple

How well each one fits the dish's main ingredients (crab, sugar, lemon):

  1. Limefits better
  2. Orangefits better
  3. Raisinfits better
  4. Applethe original

Fit is the average pairing score against crab, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
