Prepare the cucumber

  1. Peel the cucumber thinly and cut it into small pieces.

  2. Cook the cucumber in salted water until tender, then drain.

  3. Rub the cucumber through a fine sieve to make a puree.

Make the sauce

  1. In a bowl, mix the Mayonnaise, cream, anchovy essence, gherkins, and chutney.

  2. Dissolve the aspic jelly and let it cool slightly, then mix it with the cucumber puree and tarragon vinegar.

What each ingredient does

Cucumber
Forms the puree that gives the sauce its body and fresh flavour.
Mayonnaise sauce
Provides the rich, creamy fat base of the sauce.
Aspic jelly
Gelatin that lightly sets the sauce and gives it a smooth, firm texture.
Cream
Adds richness and a smooth, silky moisture to the sauce.
Tarragon vinegar
Adds acidity that brightens the rich base and sharpens the flavour.

The step that matters

Let the aspic jelly cool slightly before mixing. Hot gelatin can thin the mayonnaise and cream or cause the emulsion to separate. Cooling it slightly lets it blend smoothly and set evenly.
