What each ingredient does

Loaf sugar
Sweetens the sorbet and lowers its freezing point so it stays scoopable.
Lemons
Provide the acidity and lemon aroma that define the sorbet's flavor.
Oranges
Add juice that contributes sweetness and body to the citrus base.
Egg whites
Whisked in to add airy lightness and a softer texture to the frozen sorbet.
Castor sugar
Dissolves easily into the folded mixture, adding sweetness and helping keep it smooth.
Marsala wine
Adds aromatic depth and some alcohol, which keeps the sorbet softer when frozen.

The step that matters

Fold in the whisked egg whites. Egg whites must be whisked to stiff peaks and folded in gently with the partly frozen mixture. Overmixing deflates the foam, reducing the airy texture the egg whites are meant to add.
