Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a tender, smooth texture to the filling.
Castor sugar
Sweetens the filling and helps form a smooth creamed base with the butter.
Egg yolks
Add richness and help the filling set as it bakes.
Lemon
Provides the main acidity and bright citrus aroma.

The step that matters

Cream the butter and sugar until smooth. Beating butter and sugar together traps air and blends them evenly, giving the filling a smooth, uniform texture before the yolks and juice are added.
