Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and dry the liver.

  2. Cut the liver into thick slices.

  3. Dice the onions.

  4. Slice the potatoes.

Layer and bake

  1. Place a layer of potatoes at the bottom of a greased pie dish.

  2. Cover with slices of liver.

  3. Sprinkle with onions.

  4. Season with salt and pepper.

  5. Repeat the layers until all ingredients are used.

  6. Finish with a layer of potatoes on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pig's liver
Forms the meaty core of the pie, giving it its rich flavour and substance.
Potatoes
Form the layers that soak up moisture and brown on top as the pie bakes.
Onions
Add savoury sweetness and aroma as they soften between the layers.

The step that matters

Remove the paper towards the end. Covering keeps the pie moist while the liver and potatoes cook through. Uncovering late lets the surface dry and brown, so the potatoes take on colour rather than staying pale and steamed.

Swap the apple

How well each one fits the dish's main ingredients (liver, potato, onion, sage, pepper, sauce):

  1. Limefits better
  2. Lemonfits better
  3. Avocadofits better
  4. Applethe original

Fit is the average pairing score against liver, potato, onion, sage, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
