Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they set with heat, and add richness.
Cornflour
Thickens the milk into a smooth custard when heated.
Butter
Adds fat for a smooth, rich mouthfeel.
Sugar
Adds sweetness and balances the coffee flavour.
Milk
Forms the liquid base that the custard thickens.

The step that matters

Stir in the egg yolks and keep stirring until the mixture thickens. Egg yolks can scramble if the custard is too hot or stirred too little. Constant stirring spreads the heat evenly so the yolk proteins set into a smooth custard rather than lumps.
