The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: beta-damascenone (apple, rose).

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Sugar
Adds sweetness and balances the sharpness of the citrus juices.
Orange juice
Provides the main flavour and liquid base of the jelly.
Lemon juice
Adds acidity that brightens the flavour of the orange.

The step that matters

Straining the mixture into the juices. Straining removes the rind and any solids so the jelly sets clear and smooth. Gelatine must be fully dissolved in hot liquid first, or it will set unevenly and leave grainy specks.
