Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Open the oysters and remove the gills.

  2. Strain and preserve the liquor.

  3. Wash 9 deep shells and dry them.

  4. Coat the insides of the shells with butter.

Assemble

  1. Put 1 teaspoon of béchamel sauce in each shell.

  2. Add a few drops of liquor and lemon juice.

  3. Lay the oysters on top of the sauce.

  4. Season with a little cayenne.

  5. Cover with more sauce.

  6. Sprinkle the surface with breadcrumbs.

  7. Place a small piece of butter on each.

Bake

  1. Brown them slightly in a hot oven at 400°F (200°C).

What each ingredient does

Oysters
Provide the main seafood filling that gives the dish its flavor.
Béchamel sauce
Forms a creamy, moist base that surrounds the oysters and keeps them from drying out.
Butter
Adds richness and helps the breadcrumb topping brown in the oven.
White breadcrumbs
Form a crisp, golden topping that browns under the heat.
Lemon
Adds acidity that brightens the rich sauce and the oyster flavor.

The step that matters

Brown them slightly in a hot oven. Oysters cook quickly and turn rubbery if overheated. A short bake in a hot oven is enough to brown the topping while keeping the oysters tender and juicy.
