What each ingredient does

Parsnips
Their starch and natural sweetness form the body and main flavour of the soup.
Butter
Fat that softens the vegetables and carries flavour without browning them.
Flour
Thickens the soup as its starch swells when heated with liquid.
Milk
Adds richness and a smoother, creamier mouthfeel to the finished soup.
Lemon juice
Adds acidity that brightens the flavour of the soup.

The step that matters

Mixing the flour into the soup. Flour added directly to hot liquid can clump. Mixing it first with a little cold milk or water into a smooth paste lets its starch disperse evenly, then it thickens the soup as it heats.
