Paste, Rough Puff

Ingredients

Directions

  1. Sift the flour onto a clean surface.

  2. Cut the butter into small pieces, about the size of a walnut, and mix lightly with the flour.

  3. Make a well in the center, add the lemon juice, salt, and 1 tablespoon of water.

  4. Mix lightly, keeping the pieces of butter intact, and gradually add more water until a moderately stiff dough forms.

  5. Roll the dough into a long strip, fold it into thirds, and turn it so the folded edges are on the right and left.

  6. Roll out again. Repeat this process until the dough has been rolled out 4 times.

  7. If possible, let the dough rest in a cool place for 1 hour before using.
