Potato Soup

Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

Prepare the vegetables

  1. Slice the potatoes, onion, and celery.

Make the soup

  1. Heat the butter in a saucepan, add the vegetables, and cook until the butter is absorbed, stirring frequently to prevent browning.

  2. Add the stock and simmer until the vegetables are tender, about 1 hour.

  3. Rub the mixture through a fine sieve, return to the saucepan, and add the milk.

  4. Bring to a boil, sprinkle in the sago, and cook until transparent.

  5. Season with salt and pepper to taste, then serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down during simmering to give the soup body and a thick, smooth texture.
Butter
Fat that softens the vegetables gently and carries flavour before the liquid is added.
Milk
Adds richness and a creamy, mellow texture to the finished soup.
Sago or tapioca
Starch that thickens the soup as it cooks and turns it transparent when heated.

The step that matters

Stirring the vegetables in the butter. Cooking over heat without enough stirring can scorch the starch-rich vegetables and brown the butter, giving a bitter, dark taste. Stirring keeps the heat even so they soften in fat without colouring.

Swap the celery

How well each one fits the dish's main ingredients (milk, potato, onion, butter, pepper):
