Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavour and the fruit pulp that gives the jelly its body.
Castor sugar
Adds sweetness and balances the tartness of the rhubarb.
Leaf gelatine
Sets the liquid into a firm, sliceable jelly as it cools.

The step that matters

Dissolve the gelatine fully before straining it in. Gelatine only sets when it is completely dissolved and evenly distributed. Undissolved granules or lumps leave weak or uneven patches, so the jelly may not set firmly throughout.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits better
  4. Rhubarbthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
