Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornflour
Thickens the milk mixture as it boils, giving the cream a smooth, set body.
Cream
Adds richness and a light texture when whipped slightly and folded into the cooled mixture.
Sponge cake
Forms the base layer that soaks up the sherry and holds the custard.
Sherry
Soaks into the sponge cake, adding moisture and a sweet, aromatic flavor.
Milk
Forms the liquid base of the custard that the cornflour thickens.

The step that matters

Thickening the cornflour mixture. Cornflour must boil for a few minutes to fully swell and thicken; undercooked starch leaves the custard thin and gritty-tasting. The mixture must also cool before the cream is added, or the cream may thin or split.
