Ingredients

Directions

Prepare

  1. Soak the gelatin in cold water.

  2. Blanch the almonds or pistachios and chop them coarsely.

  3. Remove the rinds of the orange and lemon in thin strips.

Make the jelly

  1. In a copper sugar-boiler or stewpan, combine the loaf sugar, water, and the strained juice of the orange and lemon.

  2. Bring to a boil, then add the gelatin and simmer until dissolved.

  3. Strain the mixture into a basin and stir in the rum.

  4. Let the mixture sit until it is about to set, then stir in the chopped nuts.

  5. Pour the mixture into a wetted round tin.

Set and finish

  1. Once set, turn the jelly out, cut it into 1-inch square pieces, and roll them in icing sugar.

What each ingredient does

Loaf sugar
Provides sweetness and, when boiled, the body that sets into the jelly.
Leaf gelatin
Sets the liquid into a firm, sliceable jelly as it cools.
Almonds or pistachios
Add crunch and nutty flavour against the soft jelly.
Icing sugar
Coats the cut pieces, keeping their surfaces from sticking together.

The step that matters

Stirring in the nuts at the right moment. If the mixture is stirred too late it sets in the tin and the nuts settle unevenly. Stirring in the nuts just as it thickens keeps them suspended through the jelly.
