Why it works: Ginger and coriander match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 3,505 recipes. Both carry trans-2-decenal, which smells waxy, orange. The science ↓

Prawn Pellow with Lobster

Ingredients

Directions

  1. Boil lobsters with plenty of seasoning: onions, ginger, peppercorns, bay leaves, coriander seed, and salt in sufficient water to create gravy.

  2. Remove and shell the lobsters, reserving the roe in the heads.

  3. Bruise the roe with a little roasted coriander seed and mix it with the fish gravy.

  4. Prepare the pellow using the fish gravy instead of coconut or other gravy.

  5. Garnish with the lobsters.
