What each ingredient does

Cauliflower
Forms the bulk of the puree and provides its main body and flavour.
Cream
Adds richness and moisture, and thickens to a smooth texture when reduced.
Butter
Adds fat for a silky finish and rich flavour when stirred in at the end.

The step that matters

Reducing with cream. Reducing concentrates the cream and thickens the puree. Reduce gently and watch the consistency, since over-reducing can make the puree too stiff or cause the cream to separate and scorch on the pan base.
