Why it works: Beans and asparagus match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 292 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Small Vegetable Crusts, Macedoine Style

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Grease the Timbal moulds with butter and dust with flour.

  3. Roll out the paté paste and line the moulds with it, filling them with flour.

  4. Cover with a layer of paste, create a border, and baste with a mixture of egg yolk and a few drops of water.

  5. Bake in the oven until cooked, then cut out the covers without damaging the borders.

  6. Remove the flour and baste the inside and outside of the crusts with egg yolks.

  7. Place the crusts back in the oven to dry.

  8. Garnish with a Macedoine of cooked vegetables, either mixed or separately.

  9. Before filling, add a reduced Allemande or Cream sauce to the vegetables.
