Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, carrying flavour into the stock.
Peas
Contribute body and a mild sweetness to the stock.
Onions
Release sugars and aromatic compounds that deepen the stock's flavour as they stew.

The step that matters

Stew until the liquid is nearly evaporated. Reducing the liquid concentrates the flavours of the vegetables. Stopping too early leaves the stock weak, while reducing too far can scorch the vegetables on the base of the pan.
