Ingredients

Directions

Make the syrup

  1. Dissolve the sugar in water with citric acid.

  2. Boil the mixture and remove any scum.

  3. Test by dropping a bit in cold water; it should crack.

  4. Remove from heat and mix in the juice of the lemons or oranges.

  5. Boil again until thick.

Set and mark

  1. Pour into buttered pans in a thin layer.

  2. Mark into square blocks before it cools to ensure even breaking.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the body of the taffy and, when cooked to a hard-crack stage, sets firm and brittle.
Citric acid
Adds sourness and helps prevent the sugar from recrystallizing into grainy crystals.
Lemon or orange juice
Adds acidity and flavour and further discourages sugar crystallization.

The step that matters

Test by dropping a bit in cold water. The syrup must reach the hard-crack stage so the taffy sets brittle rather than sticky. Stopping early leaves a soft, chewy result, while overcooking can scorch the sugar and give a bitter taste.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, butter):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
