Mary's Tea-cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the oven to 350°F (175°C).

  2. Beat the eggs well in a bowl.

  3. Add the sugar and mix until combined.

  4. Stir in the sour milk and melted butter or pork drippings.

  5. Add the baking soda, lemon extract, and salt, mixing until smooth.

  6. Gradually add flour until the batter is as stiff as pound cake.

  7. Pour the batter into a loaf pan and bake for about 30-40 minutes or until golden brown.
