Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Add a briny, savoury flavour that seasons the meat from within as it cooks.
Hard boiled egg yolks
Bind the stuffing so it holds together rather than falling apart in the holes.
Leg of mutton
Forms the main body of the dish; its rich meat is slowly tenderised by gentle boiling.

The step that matters

Boiling gently in the cloth. A rolling boil can toughen meat and break the cloth-wrapped joint apart. Gentle simmering keeps the meat tender and the stuffing evenly cooked through.
