Lemon Puffs

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Beat and sift the sugar.

  2. Grate the lemon rind and mix it with the sugar.

  3. Beat the egg whites until stiff, then add them to the sugar and lemon mixture.

  4. Beat the mixture for an hour.

Shape and bake

  1. Shape the mixture as desired and place it on paper‑lined tin plates.

  2. Bake in a moderate oven at 350°F (175°C).

  3. Do not remove the paper until the puffs are cold.

  4. Oil the paper to help it come off easily.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Double refined sugar
Provides the bulk and sweetness, and dissolves into the egg whites to form the body of the puffs.
Egg whites
Whipped to stiff foam, they give the puffs their light, airy structure as they set in the oven.
Lemon rind
Adds bright lemon aroma and flavour through the grated oil in the peel.

The step that matters

Beat the egg whites until stiff before folding them in. Stiff whipped whites trap air that gives the puffs lift and a light texture. Under-whipped whites collapse, leaving dense, flat puffs.

Swap the lemon
