Directions for Boiling Fish
Ingredients
Directions
Fill a pot with water and add coarse sea salt to taste.
Bring the water to a boil.
Carefully add the fish to the boiling water.
Cook until the eyes turn white, fins easily pull away, and skin cracks.
Remove the fish using a fish strainer to avoid breaking it.
Slide the fish onto a fish plate, optionally placing a clean white napkin underneath to absorb moisture.
If the fish is done early, wrap it in a wet napkin and suspend it over the boiling water to keep warm.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
