Rhubarb Tart

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Peel the skins from old or stale rhubarb; leave fresh rhubarb unpeeled.

  2. Cut the rhubarb into small pieces to fill a tart dish.

  3. Sweeten the rhubarb with powdered loaf sugar according to the size of the dish. Add the juice of ½ lemon and mix well.

Assemble and bake

  1. Cover the mixture with sweet paste (pie crust). Sprinkle a little sugar over the top.

  2. Bake in a hot oven at 400°F (200°C) for 30 to 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the main filling and its sharp, tart flavour.
Loaf sugar
Sweetens the tart filling and balances the rhubarb's acidity.
Lemon juice
Adds extra acidity that brightens the flavour of the rhubarb.
Sweet paste (pie crust)
Encloses the filling and forms the baked, browned tart base.

The step that matters

Peeling old or stale rhubarb. Old or stale rhubarb has tougher, more fibrous skins that can taste bitter and toughen the texture, so peeling them improves the filling.
