Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Provide the main body, colour and sweet flavour of the soup.
Broth
Forms the liquid base that carries the carrot flavour and softens the grated carrots.
Cream or milk
Adds richness and a smooth, velvety texture to the finished soup.
Egg yolks
Thicken and enrich the soup, adding body and a creamy mouthfeel.
Butter
Adds fat and flavour when used to fry the onions.

The step that matters

Simmering the soup until soft. The carrots must be fully softened for the soup to strain smooth; undercooked carrots leave a grainy texture. Keep the pot covered and the heat low so the liquid does not reduce too quickly.

Swap the tomato

The recipe marks tomato as optional. How well each one fits the dish's main ingredients (carrot, onion, meat, butter, mace, cream, egg):

  1. Potatofits better
  2. Leekfits better
  3. Asparagusfits better
  4. Tomatothe original

Fit is the average pairing score against carrot, onion, meat, butter, mace, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
