Loin of Mutton Roasted

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove the skin and excess fat from the loin of mutton.

  2. Joint the meat and skewer it from the flap into the fillet.

  3. Insert a spit through the chump end and secure the joint with the skewer.

  4. Roast the mutton for 1 hour at 400°F (200°C).
