Ingredients

Directions

  1. Blanch, parboil, and slice the lamb-stones.

  2. If the sweetbreads are thick, cut them in half and flour them.

  3. Fry the lamb-stones, sweetbreads, and oysters in butter until golden brown.

  4. Pour off the butter and add the gravy, asparagus tops, nutmeg, pepper, salt, and shallots or chives.

  5. Simmer for 10 minutes.

  6. Mix a little gravy with the beaten egg yolks, then gradually combine with the rest of the gravy.

  7. Return the mixture to the pan and stir until thickened, without boiling.

  8. Garnish with lemon before serving.
