Pigeon Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Cover the bottom of a dish with the sliced rump steak.

  3. Season with salt, pepper, parsley, and shallot.

  4. In a bowl, mix the chopped hard-boiled eggs, liver, shallot, parsley, breadcrumbs, and butter.

  5. Fill the pigeons with the mixture.

  6. Place the pigeons in the dish and add more seasoning.

  7. Fill the dish with the remaining steak and season again.

  8. Add water or gravy to the dish.

  9. Cover with puff pastry, cut leaves from the pastry, and lay them on top.

  10. Brush with egg wash and bake until golden.
