What each ingredient does

Carrot
Provides the bulk and body of the pudding, along with a mild sweetness.
Egg yolks
Enrich the custard and help it set into a firm, smooth texture when baked.
Egg whites
Add structure and lightness, helping the mixture set as it bakes.
Cream
Adds richness and moisture, giving the pudding a tender, creamy texture.
Bread crumbs
Absorb liquid and help give the pudding body so it holds its shape.
Loaf sugar
Sweetens the pudding and helps it brown lightly during baking.

The step that matters

Baking until set. Eggs set as their proteins coagulate with heat. Pulling the pudding too early leaves it runny, while overbaking makes it dry and curdled, so check that it is just firm in the centre.
