Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main fruit flavour, colour and body of the cream.
Sugar
Adds sweetness and balances the tartness of the fruit and lemon.
Lemon juice
Adds acidity that brightens the strawberry flavour.
Isinglass
Gelatin-like setting agent that firms the mixture as it chills.
Heavy cream
Adds richness and a light, airy texture when whipped in.

The step that matters

Set the vessel on ice, stirring until it begins to set. Stirring while the mixture cools keeps it smooth and evenly textured. If it sets unevenly or too far before filling the mold, the cream can turn lumpy and will not pour cleanly into the mold.
