What each ingredient does

Cauliflowers
Forms the firm, crisp pickled florets and stalk that hold their shape in the jar.
Cold vinegar
Provides the sharp acidity that preserves the cauliflower and gives the pickle its tang.
Turmeric
Gives the pickle its yellow colour and an earthy, slightly bitter flavour.
Mustard seed
Adds a pungent, slightly sharp flavour that deepens in the spiced vinegar.
Coriander seed
Contributes a citrusy, floral aroma to the spiced vinegar.
Ginger
Adds warm, aromatic heat that rounds out the spiced vinegar.

The step that matters

Scalding without boiling. Boiling the cauliflower softens its florets and leaches out colour and flavour. A gentle scald partly cooks the vegetable while keeping it crisp and bright, so it holds texture and colour through pickling.
