Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Their rind and juice supply the main flavor and tartness of the jelly.
White sugar
Sweetens the jelly and balances the sharpness of the lemon.
Isinglass
Gelatin-like protein that sets the liquid into a firm jelly when cooled.
Egg whites
Whipped whites are added to the hot liquid, where they help clarify it by trapping impurities.

The step that matters

Boil without stirring, then skim and strain. Stirring during the 5-minute boil can break up the coagulating egg whites and cloud the jelly, so the mixture is left undisturbed to let impurities rise and collect for skimming and straining.

Swap the turmeric

How well each one fits the dish's main ingredients (lemon, sugar, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Dillfits better
  4. Turmericthe original

Fit is the average pairing score against lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
