Lemon Puffs

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Beat and sift the sugar.

  2. Grate the lemon rind and mix it with the sugar.

  3. Beat the egg whites until stiff, then add them to the sugar and lemon rind.

  4. Beat the mixture for 1 hour.

Shape and bake

  1. Shape the mixture as desired and place it on paper-lined tin plates.

  2. Bake in a moderate oven (350°F / 175°C) until set, about 15-20 minutes.

  3. Do not remove the paper until the puffs are cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and the bulk of the structure of the puffs.
Egg whites
Whipped to stiff foam, they trap air and give the puffs their light, set structure.
Lemon rind
Adds aromatic lemon oils for flavour without adding liquid.

The step that matters

Beat the mixture for 1 hour. Long beating keeps air trapped in the whipped egg whites and dissolves the sugar into them, which gives the puffs their light texture once baked.
