Curds and Cream

Why it works: Sugar and buttermilk match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 2,973 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Curds and Cream

Ingredients

Directions

Make the curd

  1. Warm the milk in a pan and add rennet or gallino.

  2. When the curd forms, ladle it into a perforated earthen shape.

  3. Fill the shape as the whey drains off without breaking the curd.

  4. For a firmer curd, prepare it earlier and squeeze it.

Serve

  1. Serve with cream, sugar, wine, and lemon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the curd when warmed and set by rennet, becoming the body of the dish.
Rennet or gallino
Enzyme that coagulates milk proteins into a soft curd.
Cream
Adds richness and fat for a smooth mouthfeel when served.
Sugar
Adds sweetness to balance the tangy curd.

The step that matters

Ladling the curd without breaking it. Gentle handling keeps the curd in soft, intact pieces. Breaking it early lets more fat and protein escape into the whey, leaving a grainy, less creamy result.

Swap the lemon

How well each one fits the dish's main ingredients (milk, cream, sugar, wine, buttermilk):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits about as well
  4. Lemonthe original

Fit is the average pairing score against milk, cream, sugar, wine, buttermilk. Candidates are from the same food group and used in at least 100 recipes.
