What each ingredient does

Salt cod
Is the main protein, which is rehydrated by soaking so it becomes tender and edible.
Butter
Forms the base of the sauce, adding richness and a smooth, silky texture.
Flour
Thickens the melted butter into a smooth sauce that clings to the fish.
Lemon juice
Adds acidity that brightens the rich butter sauce.
Potatoes
Provide a plain starchy side that soaks up the sauce.

The step that matters

Simmer, then rest the fish. Boiling salt cod hard toughens its proteins and makes it dry and stringy. Keeping it at a gentle simmer and then letting it rest off the heat lets it cook evenly and stay moist and flaky.

Swap the white pepper

How well each one fits the dish's main ingredients (capers, butter, parsley, lemon, flour, potato):

  1. Tarragonfits better

  3. Dillfits better
  4. White pepperthe original

Fit is the average pairing score against capers, butter, parsley, lemon, flour, potato. Candidates are from the same food group and used in at least 100 recipes.
