What each ingredient does

Apples
Provide the bulk of the filling and its tender, fruity body once stewed and sieved.
Egg yolks
Enrich and thicken the filling, giving it a set, custard-like structure when baked.
Egg white
Adds protein that helps the filling set and gives a lighter texture.
Butter
Adds fat for richness and a smooth, tender mouthfeel.
Moist sugar
Sweetens the filling and helps it brown lightly in the oven.
Puff pastry
Forms a flaky, crisp shell that holds the filling in the dish.

The step that matters

Sieving the stewed apples. Passing the cooked apples through a fine sieve removes lumps and fibrous bits, giving a smooth filling that sets evenly with the eggs rather than a grainy texture.

Swap the apple

How well each one fits the dish's main ingredients (cinnamon, clove, lemon, sugar, egg, butter, nutmeg):
