Why it works: Pepper and potato are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Potato Puffs
Ingredients
Directions
Remove gristle from the cold roast meat and cut it into small pieces.
Season the meat with Zest or pepper and salt, and add chopped pickles.
Boil and mash the potatoes, then mix them with 1 or 2 eggs to form a paste.
Dust a surface with flour and roll out the potato paste.
Cut the paste into circles using a saucer.
Place some seasoned meat on one half of each circle and fold it over to create a puff.
Pinch the edges to seal and fry the puffs until they are light brown.
