What each ingredient does

Isinglass
Sets the liquid into a firm jelly as it cools.
Loaf sugar
Provides sweetness and body to balance the acidity of the lemon.
Lemon juice
Adds acidity and bright flavour that cuts the sweetness.
Rum
Adds aroma and warmth to the flavour of the jelly.
Brandy
Adds aroma and warmth to the flavour of the jelly.

The step that matters

Add the dissolved isinglass to the mixture. Isinglass must be fully dissolved before it is added, and the mixture should be well mixed so the gelatin-like setting agent distributes evenly; lumps or uneven mixing lead to a patchy, weak-setting jelly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, rum, wine, brandy):

  1. Vanillafits better
  2. Pineapplefits better
  3. Apricotfits better
