Season the meat and place it in the bottom of the pasty pan.
Add a piece of butter and a little water.
Put the perforated plate in place with its valve-pipe screwed on.
Spread mashed potatoes mixed with a little milk on top, filling to the top of the tube.
Decorate the surface as desired.
Place the knob at the end of the tube and send it to the oven.
Bake carefully until the potatoes are covered with a delicate brown crust.
